Our “Insight into Indian Food” course was a gift from our family, organised by our daughter. Hannah’s enthusiasm for Bakul’s style was matched by my own when I telephoned to book the date. He spent a lot of time ensuring I was happy with the plans, having guided me through balancing flavours and food types and checking any dietary concerns, likes, and dislikes. He even adjusted the times to make our journey easier. We were made to feel very much at home from the moment we arrived.
Not only did the course include the preparation and cooking of the meal (and eating it!) but also background information about regional variations in styles and ingredients and the reasons behind these, tips on techniques, hints on buying produce and his patiently answering our myriad questions about all things Indian.
I now feel much more confident in cooking Indian food, although I am sure it will not be long before I go back to the school to learn more; perhaps next time, with Hannah.
