My family treated me to an Introductory Course at the Indian Spice School, as a birthday gift. The experience began some weeks before the actual day, with a very thoughtful and helpful telephone conversation with Bakul, during which he assessed my needs and interests, to get the most out of the time we would spend together. My anticipation was high, and I’m pleased to say proved to be entirely justified. Bakul was very welcoming, charming and informative, and I learned so much in a relatively short time. On the one hand, he related the many strands of history and geography that have shaped Indian cooking today. At the other end of the spectrum, Bakul opened a window into his unique kitchen etiquette, giving me a raft of ideas and techniques to try to use for myself. And of course, under his instruction I cooked a wonderfully tasty meal, quite different to the Indian meals I had prepared before, and much better! Highly recommended!
